The hunt is on for WA’s Signature Dish 2015

WA Signature Dish 2015 launch at Bistro Guillaume Crowne PerthBigger and better than ever, WA’s Signature Dish – a statewide cooking competition that promotes Western Australia’s beautiful and abundant local produce – is calling for all foodies and amateur cooks to battle it out for the title of Buy West Eat Best’s WA’s Signature Dish 2015.

The Hon. Ken Baston MLC, Minister for Agriculture and Food and celebrated chef Guillaume Brahimi launched the competition at Bistro Guillaume, Crown Perth on August 10th, encouraging anyone with a passion for locally sourced food to enter for this year’s competition.
Buy West Eat Best have teamed up with some of WA’s most respected chefs and industry figures to promote WA food. Guillaume Brahimi returns as Head Judge alongside fellow judges Rob Broadfield and Shane Osborn (from Michelin starred St Betty’s restaurant and Arcane in Hong Kong). This year’s Mentor Chefs include Chris Taylor (Fraser’s), Peter Manifis (Incontro), Kiren Mainwaring (Co-op Dining) and Jason Hutchen (Redmanna Waterfront Restaurant).
WA’s Signature Dish aims to showcase produce from across the State and this year’s participating regions will include the Gascoyne, Kimberley, Swan Valley & Surrounds and Peel. Entrants are required to use at least one ‘hero ingredient’ from one of the four regions.
Head judge Gulliaume Brahimi, said the competition highlights the world class ingredients WA has to offer and gives amateur cooks the opportunity to create a dish that represents the State. “I am looking forward to seeing and tasting what the contestants create this year and which ingredients they use – there is just so much fantastic produce to choose from here in WA. I always love to hear the stories behind a dish as well, where the idea came from, who grew the food, whether it was created purely to feature the flavour of an inspiring ingredient or if it is a family favourite that has been passed down,” Brahimi said.

In 2014, Rhiannon Birch won the inaugural WA’s Signature Dish with her Dorper lamb in lupin and za’tar crust with sweet potato and lupin salad and Moroccan flavours. “I was completely blown away with the competition last year. It was a lot of fun and so inspiring to work with the mentor chefs and meet the other contestants. I really encourage anyone who has a passion for food and cooking to give the competition a go. It’s all about showcasing the amazing produce we have right here in our backyard in WA as well as meeting great people and making connections along the way”, Ms Birch said.

To be in the running to win, contestants need to submit their recipes online and if selected to continue, will go on to compete in a semi final cook-off event in Perth on 14 October. The four regional semi-final winners will each work with their mentor chef to get ready for the Grand Finale, which will be one of the highlights of the Margaret River Gourmet Escape event. Finalists will battle it out during a 60 minute session at the Chef’s Theatre to decide which regional dish will win the annual title of WA’s Signature Dish.

The winner of WA’s Signature Dish will be crowned at a glittering Grand Finale at the Margaret River Gourmet Escape on 22 November and receives a two-day mentorship with Guillaume Brahimi at Bistro Guillaume in Crown Perth. They will also win a trip for two to a luxurious remote Western Australian location for a wine and dine experience and the opportunity to meet some of WA’s most respected chefs and industry figures along the way.

Gourmet Village attendees can sample the four finalist dishes at a Buy West Eat Best regional pop up restaurant. The ‘People’s Choice’ WA’s Signature Dish Trophy will be awarded to the most popular regional dish.
