How To Make The Perfect Guacamole

The founder of Kamalaya Dr Karina Stewart is Mexican and this is her delicious and authentic recipe for guacamole. Traditionally there is no chilli or garlic in the recipe which allows the clean flavours to shine.
3 avocados peeled and stone removed
60 g finely diced onion (shallot)
10 g coriander, chopped
juice from 1 1/2 limes — depending on your taste (use one first and add extra only if needed)
20 g cold pressed olive oil or avocado oil ( 2 tablespoons )
½ tsp sea salt (1 g)
1/2 tsp ground black or white pepper (1 g)
Chop the avocado into rough chunks.
Place into a food processor, high speed blender or regular mixing bowl and combine with onion, lime, oil, sea salt and pepper.
Process in the machine or mash manually with a fork until combined.
Fold through coriander and enjoy.
Sore in the fridge until required.
